Banana Prune Marlow

(Gluten Free Dairy Free Egg Free)

2 tablespoons lemon gelatin

5 tablespoons boiling water

1 tablespoon prune pulp

1 tablespoon banana pulp

To make the prune pulp, cut up three or four large prunes and place in a small bowl that is microwave safe. Add a little water and microwave for 1 minute. You may have to add extra water. Once they are cooked, buzz in the food processor.

Banana pulp: mash an appropriately sized section of banana with a fork until it no longer has chunks.

Dissolve the gelatin in boiling water. Chill just until it starts to set. Add the prune and banana pulp. Stir well to mix fruit throughout gelatin. Chill until firm.

Makes one serving.
