(Gluten and Casein Free)
1/2 cup dairy free margarine
1/2 cup granulated sugar
1/2 cup brown sugar, loosely packed
1 egg, beaten
2 cups rice flour
few grains of salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup chopped nuts
1/2 cup raisins
Cream the margarine and sugars together. Add the beaten egg and cream the mixture until fluffy. Add sifted dry ingredients. Beat the combination well. Stir in the nuts and raisins.
Form the mixture into a roll on wax paper and refrigerate overnight. Slice and baked on a greased cookie sheet at 350 F for 12 - 15 minutes. Cookies can also be dropped by the spoonful onto a greased baking sheet. No need to refrigerate if making drop cookies.
